Strawberry Colada Cupcakes

These are my most favorite cupcakes that I've ever made. These date the whole way back to Cupcake Wednesday days, when I baked cupcakes for my friends every Wednesday of my sophomore year in high school. They're so positively yummy and just the perfect summer treat. But yesterday was my last day of work for the summer, and this was the treat I decided to make for the occasion. It was my day, and they are my favorite!

Ingredients
Cake
1½ cups of fresh strawberries, hulled
½ cup of coconut milk
1½ teaspoons of coconut extract
½ teaspoon of vanilla extract
2 cups of cake flour
2 teaspoons of baking powder
¼ teaspoon of salt
1½ sticks of butter, room temperature
1⅓ cups of sugar
1 whole egg + 1 egg white
¼ cup of drained crushed pineapple
Frosting
2 sticks of butter, room temperature
3½ cups of powdered sugar
½ teaspoon of vanilla extract
1 teaspoon of coconut extract
3 tablespoons of strawberry puree

Directions
Feel free to preheat your oven to 350, if doing things in advance is your style. Start out by blending all those strawberries, and take 2/3 cup of the puree. Into that, add the coconut milk, vanilla, and coconut extract. Then pull all your dry ingredients together- cake flour, baking powder, and salt. Whisk that up to incorporate it (I recently read an article where a baker tested 3 methods of incorporation- doing nothing, whisking and sifting. Turns out whisking is best, doing nothing makes a lumpyish cake, sifting makes it too dry, and whisking is a perfect middle ground). Finally, get to the stand mixer and cream the butter and sugar until it's smooth and fluffy, then add in the eggs on at a time. Add a third of the dry mix, followed by a half of the wet mix, back and forth until it's all together. Then stir in the pineapple by hand. Fill 24 cupcake liners about ¾ full and bake them for about 18-20 minutes.

For the frosting, cream the softened butter, then add powdered sugar about a half cup at a time until it's all in. If it gets too dry, start adding the extracts and strawberry. Then add in whatever's left! It's very important to whip this up for about 5 minutes because it'll get really fluffy and beautiful! Then frost the cupcakes however you'd like. And if you want, toast some coconut and put it on top!

I don't care what anyone else says because these are my favorite and they were perfect in every way possible. That being said, everyone did love them, not that it's relevant.
