Oreo Truffle Brownies

So I mentioned in my first post with the cookie dough truffles how Oreo truffles and I have a long history. We go way back. I love them, the filling is honestly to die for, I just hate the dipping process. So this was perfect. I got to enjoy the yummmmmmmy filling without suffering through the excruciating truffle process. And they were so wonderfully easy! I made them for a party my parents threw for their friends on Sunday night. I started baking a little after 6 and they were done by 7:30. Most of the process was just waiting for things to cool. If you wanted to make it even faster, you could use a brownie mix. Brownie mixes aren't as offensive to me as cake mixes. There's absolutely no reason for that hypocrisy and I can't explain it. Regardless, they were easy and delicious as long as rich and chocolatey is your jam. I found them on Pinterest from a site called  Chef in Training . Memorial Day Sugar Cookies

Making these cookies reminded me of a very nice time when I started making cupcakes. #TBT if you will. For the first, like, three weeks of baking cupcakes, I was awful at it. Just awful. I always overbaked them, they were so dry they were basically inedible. I didn't really know how to frost either. I just haphazardly spread some overly stiff frosting with a knife, and even when I picked up piping I was still awful. The point of the matter is that it didn't come naturally to me; it took a lot of practice. So, I don't really know why I expected that I could just pick up cookies and be super good at it right away. They turned out alright in the end, but the process was certainly trying. I just can't tell when cookies are done, I've never made royal icing before, and I'm not awesome at piping in a straight line. Those were the primary obstacles. Funfetti Cupcakes with Vanilla Buttercream

Mmmmmmmmmm These goodies were a product of what I already had in the cabinets. I worked all day yesterday and didn't really feel like buying fancy ingredients and making something fussy. So I reverted to an old favorite. I promised myself I would branch out from cupcakes, and if I did relapse, it would at least be an interesting flavor or decoration...then I made vanilla cupcakes with vanilla buttercream. But I have no regrets! They're cute, they're easy, and they're always a crowd pleaser. You really can't go wrong with vanilla, especially this one. It's my old standard. The recipe comes from an awesome blog called the Cupcake Project. She makes some really insane flavors, like these absinthe cupcakes  and these salt and vinegar pork rind cupcakes with a beer glaze . Chocolate Chip Cookie Dough Truffles

For my first post, I chose to make these little truffles. The recipe was pretty straight forward, it looked easy enough. I just forgot one important thing--I hate making truffles. I haven't made them in so long, I guess I just repressed that particular memory. Freshman year of high school, I made these Oreo truffles for one party, but they're so freaking delicious that people kept asking me to make them for other parties or even paying me for them. I can make and roll the filling no problem, but dipping them in the chocolate is just the biggest pain in the tuchas. I'm so bad at melting chocolate that I'm probably cursed. I even use a double boiler like a fancy person! But my first batch of melted chocolate seized up. I thought, this is so thick, what could I add that would make it nicer? For some inexplicable reason I added corn syrup. Never add corn syrup. So then I made my loving father go to the store and pick up another bag of chocolate chips, which I overheate
